For the marinade
Instructions
Toss chicken strips with lime juice, 2 tbsp olive oil, chili powder, cumin, garlic powder, paprika, and salt. Marinate for at least 15 minutes (up to 2 hours in the fridge).
Heat remaining olive oil in a large skillet or cast iron over high heat. Cook chicken strips for 5-6 minutes, turning once, until charred and cooked through. Remove to a plate.
Tip: High heat is key for fajitas. You want a sear, not a steam. Don't overcrowd the pan.
In the same hot pan, add peppers and onion. Cook for 4-5 minutes until slightly charred but still crisp. Return chicken to the pan and toss together.
Warm tortillas in a dry skillet or directly over a gas flame. Serve the sizzling fajita mix with warm tortillas, sour cream, and cilantro.
