For pico de gallo
Instructions
Make the pico de gallo: combine diced tomatoes, onion, cilantro, lime juice, and a pinch of salt. Set aside.
Brown the ground beef in a large skillet over medium-high heat, breaking it up with a spoon, for 6-8 minutes until fully cooked. Drain excess fat.
Add chili powder, cumin, garlic powder, paprika, salt, and water to the beef. Stir and simmer for 5 minutes until the sauce thickens and coats the meat.
Warm tortillas in a dry skillet for 30 seconds per side. Fill with seasoned beef, pico de gallo, shredded cheese, and a drizzle of crema. Serve with lime wedges.
Tip: Double up the corn tortillas (two per taco) to prevent them from falling apart.
