Boil potatoes in salted water for 12 minutes until tender. In the last 3 minutes, add green beans. Drain both and cool under cold water.

Boil eggs for 7 minutes, then transfer to ice water. Peel and halve.

Season tuna with salt and pepper. Sear in a hot oiled skillet for 1-2 minutes per side for rare. Slice thin.

Tip: For Nicoise, the tuna should be rare in the center. If you prefer cooked through, use canned tuna packed in olive oil instead.

Whisk together Dijon, vinegar, olive oil, salt, and pepper. Arrange greens, potatoes, green beans, eggs, tomatoes, olives, and tuna on a platter. Drizzle with dressing.
