Preheat oven to 400F. Brown the ground beef in a skillet over medium-high heat. Drain fat, add taco seasoning and 2 tbsp water, simmer 2 minutes.
Spread half the chips on an oven-safe platter or sheet pan. Top with half the beef, beans, and cheeses. Repeat with a second layer.
Tip: Layering is the secret to great nachos. Every chip should have cheese and toppings, not just the ones on top.
Bake for 8-10 minutes until the cheese is fully melted and bubbling.
Top with jalapeños, pico de gallo, guacamole, and sour cream. Serve immediately.
