Grilled Cheese (Dinner Version)
An elevated grilled cheese with three cheeses, caramelized onions, and Dijon mustard on thick sourdough. Served with a side salad for a proper dinner.

Melt 1 tbsp butter in a skillet over medium-low heat. Add onion slices and cook for 12-15 minutes, stirring occasionally, until deeply caramelized and golden.
Tip: Low heat and patience are key. Don't rush the caramelization.
Spread a thin layer of Dijon mustard on the inside of each bread slice. Layer the three cheeses and caramelized onions between the slices.
Spread mayonnaise on the outside of each slice (this gives a crispier, more even golden crust than butter alone).
Cook in a skillet over medium heat for 3-4 minutes per side, pressing gently, until deeply golden and the cheese is fully melted.
Toss mixed greens with balsamic vinaigrette. Slice the sandwiches diagonally and serve with the salad on the side.
