Preheat oven to 425F. Line a baking sheet with parchment paper.
In a small bowl, mix the panko, parsley, lemon zest, garlic, olive oil, salt, and pepper until combined.
Pat the cod fillets dry. Brush the top of each fillet with a thin layer of Dijon mustard.
Tip: The mustard acts as both flavoring and glue for the breadcrumb crust.
Press the panko mixture firmly onto the top of each fillet. Place on the baking sheet.
Bake for 12-15 minutes until the crust is golden and the fish flakes easily with a fork (internal temp 145F).
Serve with lemon wedges. Pairs well with roasted asparagus or a simple green salad.
