Combine the chicken with yogurt, lemon juice, cumin, 1 tsp garam masala, paprika, and 1/2 tsp salt. Marinate for at least 20 minutes (or up to overnight in the fridge).

Preheat your broiler to high. Spread the chicken on a foil-lined baking sheet and broil for 4-5 minutes per side until charred in spots. Set aside.

Tip: Watch the broiler closely. The difference between perfectly charred and burnt is about 30 seconds.

Melt butter in a large pan over medium heat. Saute the onion for 5 minutes. Add garlic, ginger, coriander, and remaining garam masala. Cook 1 minute.

Add crushed tomatoes and remaining salt. Simmer for 15 minutes, stirring occasionally, until thickened.

Stir in the heavy cream and add the broiled chicken pieces. Simmer for 5 more minutes until everything is heated through.

Serve over steamed basmati rice with warm naan on the side.
