Marinate the chicken cubes in yogurt, garam masala, turmeric, and 1/2 tsp salt for at least 15 minutes.
Melt 1 tbsp butter in a large skillet over medium-high heat. Sear the chicken pieces for 3-4 minutes until browned on all sides (they don't need to be cooked through). Remove and set aside.
In the same skillet, melt the remaining butter. Saute the onion for 4-5 minutes until softened. Add garlic, ginger, cumin, and chili powder. Cook for 1 minute.
Add the crushed tomatoes, sugar, and remaining salt. Simmer for 10 minutes until the sauce thickens.
Blend the sauce with an immersion blender until smooth (or leave chunky if preferred). Stir in the heavy cream.
Return the chicken to the sauce. Simmer on low for 10 minutes until the chicken is cooked through and tender.
Garnish with fresh cilantro. Serve over basmati rice or with warm naan bread.
