Mash the bananas in a large bowl with a fork until mostly smooth (a few small lumps are fine).
Add the eggs, milk, melted butter (1 tbsp), and vanilla to the mashed bananas. Whisk to combine.
In a separate bowl, whisk together the flour, baking powder, sugar, and salt. Add the dry ingredients to the wet and stir until just combined.
Tip: Do not overmix. A few small lumps are fine and will make the pancakes fluffier.
Heat a non-stick skillet or griddle over medium heat. Add a small pat of butter. Pour about 1/4 cup of batter per pancake.
Cook until bubbles form on the surface and the edges look set (about 2-3 minutes). Flip and cook for another 1-2 minutes until golden.
Serve stacked with sliced banana on top, a pat of butter, and warm maple syrup.
