Combine olive oil, lemon juice, oregano, garlic, and salt. Toss with the chicken. Marinate at least 30 minutes. Thread onto skewers.

Grill or pan-sear over medium-high heat for 10-12 minutes, turning occasionally, until charred and cooked through (165F).

Tip: Use chicken thighs, not breasts. Thighs stay juicy on the grill. Breasts dry out too easily at high heat.

Warm the pita on the grill for 30 seconds per side. Slide the chicken off the skewers onto the pita.
