Place eggs in a single layer in a saucepan and cover with cold water by 1 inch. Bring to a rolling boil, then cover, remove from heat, and let sit for 12 minutes.

Tip: Starting with cold water and using the residual heat method prevents that gray-green ring around the yolk.

Transfer eggs to an ice bath for 5 minutes. Peel under running water and slice each egg in half lengthwise.

Scoop yolks into a bowl. Mash with a fork until smooth. Add mayonnaise, mustard, vinegar, salt, and pepper. Mix until creamy.
