Blanch the spinach in boiling water for 2 minutes. Drain and immediately transfer to ice water. Squeeze out excess water and blend into a smooth puree.
Heat ghee in a pan over medium heat. Fry the paneer cubes until lightly golden on all sides, about 2 minutes. Remove and set aside.
In the same pan, cook the onion for 5 minutes. Add garlic, ginger, and green chili. Cook 1 minute. Add cumin, garam masala, and turmeric. Cook 30 seconds.
Tip: Don't skip blanching the spinach in ice water. It preserves the vibrant green color. Without it, the dish turns an unappetizing dark green.
Add the spinach puree and salt. Simmer 5 minutes. Stir in the cream and paneer. Cook 3 more minutes until the paneer is heated through. Serve with basmati rice or naan.
