Combine lime juice, olive oil, garlic, cumin, chili powder, cilantro, and salt. Marinate the steak for at least 30 minutes (up to 4 hours in the fridge).

Tip: Don't marinate longer than 4 hours. The acid in lime juice will start to break down the meat fibers and make it mushy.

Heat a grill or cast iron skillet to very high heat. Pat the steak dry. Sear for 3-4 minutes per side for medium-rare. The char is important.

Rest the steak for 5 minutes, then slice thin against the grain. Grill the onion slices and warm the tortillas.

Serve the sliced steak on warm tortillas with grilled onions, salsa verde, and lime wedges.
