BBQ Ribs

Fall-off-the-bone baby back ribs with a homemade dry rub and sticky BBQ glaze. Oven-baked low and slow, then finished under the broiler for charred, caramelized edges.

Remove the membrane from the back of each rack by sliding a butter knife under it and peeling it off with a paper towel for grip.

Tip: Removing the membrane is essential. It gets rubbery when cooked and prevents the rub from penetrating.

Mix all rub ingredients together. Coat the ribs generously on both sides. Let sit at room temperature for 30 minutes (or refrigerate overnight).

Preheat oven to 275F. Wrap each rack tightly in foil and place on a baking sheet. Bake for 2.5 hours.

Mix the BBQ sauce, vinegar, and honey for the glaze.

Unwrap the ribs and brush generously with the glaze. Turn the broiler to high and broil for 3-5 minutes, watching carefully, until the glaze is bubbly and charred in spots.

Let rest 5 minutes, then slice between the bones and serve with extra BBQ sauce on the side.
