Instructions
Mix coconut milk, soy sauce, turmeric, cumin, and brown sugar. Toss with chicken strips and marinate at least 15 minutes (up to 4 hours in the fridge).
Make the peanut sauce: whisk peanut butter, coconut milk, soy sauce, lime juice, sriracha, and garlic until smooth. Add water to thin if needed.
Tip: The sauce should be thick but drizzly. Add warm water a tablespoon at a time to reach the right consistency.
Thread chicken onto soaked wooden skewers. Grill or broil on high for 3-4 minutes per side until slightly charred and cooked through.
Serve skewers with peanut sauce for dipping, alongside steamed rice or a simple cucumber salad.
