Bring the broth to a boil. Stir in the oats, reduce heat to medium-low, and cook for 5 minutes, stirring occasionally, until creamy. Stir in Parmesan, salt, and pepper.
While the oats cook, melt butter in a skillet over medium-high heat. Saute the mushrooms for 5 minutes until golden. Season lightly with salt.
Soft-boil the eggs: lower into boiling water for 6.5 minutes, then transfer to ice water. Peel and halve.
