Preheat oven to 425F. Slice each chicken breast horizontally to make 4 thin cutlets. Season with salt and pepper.
Set up three bowls: flour, beaten eggs, and panko mixed with Parmesan. Dredge each cutlet in flour, dip in egg, then press into the panko mixture.
Tip: Use one hand for dry ingredients and the other for wet to avoid clumpy fingers.
Heat olive oil in an oven-safe skillet over medium-high heat. Pan-fry cutlets for 3 minutes per side until golden. Pour marinara over each cutlet and top with mozzarella.
Transfer skillet to the oven and bake 10-12 minutes until cheese is melted and bubbly.
While chicken bakes, cook spaghetti according to package directions. Serve chicken over spaghetti with extra marinara and fresh basil.
