Pat tuna steaks completely dry with paper towels. Press sesame seeds firmly into all sides.

Mix soy sauce, rice vinegar, sesame oil, and grated ginger for the dipping sauce.

Heat vegetable oil in a skillet over high heat until it just begins to smoke. Sear tuna for 1-1.5 minutes per side for rare (longer for medium).

Tip: Only use sushi-grade tuna. The center should be completely raw and cool. If your pan isn't screaming hot, wait.

Slice against the grain into 1/4-inch slices. Fan out on plates, garnish with green onion. Serve with dipping sauce and wasabi on the side.
