Warm the black beans in a small saucepan over medium heat. Season with a pinch of salt.

Crack the eggs into a bowl, add salt and pepper, and whisk until uniform. Melt butter in a non-stick skillet over medium-low heat and scramble the eggs, stirring gently until just set (about 2-3 minutes).

Tip: Remove eggs from heat while still slightly wet. They'll continue cooking from residual heat.

Warm the tortillas in a dry skillet for 20-30 seconds per side or in the microwave for 15 seconds.

Layer each tortilla with scrambled eggs, black beans, cheese, sliced avocado, and salsa. Add hot sauce if desired.

Fold the sides of the tortilla in, then roll tightly from the bottom up to form a burrito. Slice in half and serve.

Tip: For meal prep, wrap tightly in foil and freeze. Reheat in a 375F oven for 20 minutes.
