Blend chipotles, orange juice, lime juice, cumin, paprika, garlic, and salt into a paste. Rub all over the pork shoulder.
Place pork in a slow cooker, cover, and cook on low for 8 hours (or high for 4 hours) until the meat falls apart when pulled with two forks.
Tip: If you have time, sear the pork in a hot skillet first for deeper flavor. It adds 5 minutes but makes a noticeable difference.
Shred the pork with two forks, discarding any large pieces of fat. Toss the shredded meat in the cooking juices.
Quick-pickle the red onion: toss slices with 2 tbsp lime juice and a pinch of salt. Let sit 15 minutes.
Warm tortillas in a dry skillet. Fill with pulled pork, pickled onion, cilantro, and a squeeze of lime.
