Cook bacon in a large pot over medium heat until crispy. Remove and set aside. Leave the fat in the pot.

Add butter and onion to the pot. Cook 4 minutes until softened. Add garlic, cook 30 seconds.

Add potatoes and chicken broth. Bring to a boil, then reduce to a simmer. Cook 15 minutes until potatoes are tender.

Use a potato masher to mash about half the potatoes in the pot (this thickens the soup while keeping some chunks for texture).

Tip: For a smoother soup, use an immersion blender. For chunkier, mash less.

Stir in heavy cream, salt, and pepper. Cook 5 more minutes on low heat.

Ladle into bowls and top with cheddar, sour cream, crispy bacon, and chives.
