Set up a breading station: flour in one dish, beaten eggs in another, breadcrumbs mixed with garlic powder and oregano in a third. Dip each cheese stick in flour, then egg, then breadcrumbs. Repeat the egg and breadcrumb step for a double coat.

Tip: Double breading is essential. A single coat will burst open during frying.

Place breaded sticks on a parchment-lined baking sheet and freeze for at least 1 hour. They must be frozen solid before frying.

Heat vegetable oil to 375F in a deep pot. Fry the frozen mozzarella sticks in batches for 1-2 minutes until golden brown. Don't overcook or the cheese will leak out.

Drain on paper towels for 1 minute. Serve immediately with warm marinara sauce.
