Absolutely. Professional cooks work with speed because they use the right techniques — thin cuts, high heat, minimal steps. A 4-ounce chicken cutlet pounded thin sears in 6-7 minutes total. Shrimp take 90 seconds per side. Add pre-prepped or quick-cooking sides and you have a complete plate. Speed doesn't mean sacrificing quality; it means choosing ingredients and methods that are naturally fast.
How is this different from the 30-minute meal plan?
Ten minutes less changes the recipe selection significantly. Our 30-minute plan includes some oven roasting and longer simmers. The 20-minute plan is pure stovetop and assembly — no waiting for ovens to preheat, no slow braises. Proteins are thinner cuts, vegetables are quicker-cooking varieties, and sauces are made in the same pan while the protein rests.
Do I need to prep ingredients ahead of time?
The 20-minute timer includes all prep. That said, if you want to make it even faster, washing and chopping vegetables on Sunday for the whole week shaves 3-5 minutes off each meal. But it's not required — every recipe is designed to hit 20 minutes from a cold start.
What about cleanup — does it take longer than cooking?
Most 20-minute meals use one skillet or one pot, so cleanup is minimal. We deliberately avoid recipes that need multiple pans or specialty equipment. If you follow the 'clean as you cook' habit — wiping the cutting board while the protein sears — you'll sit down to eat with an already-clean kitchen.
