Heat the oil in a skillet over medium-high heat. Fry the tortilla strips for 2-3 minutes until crispy and golden. Remove to a paper towel.

In the same skillet (reduce heat to medium), cook the onion, tomato, and jalapeño for 3 minutes until softened.

Beat the eggs with salt and pour into the skillet. Scramble gently, folding in the crispy tortilla strips as the eggs begin to set. Add the cheese and stir until just melted.

Tip: Add the tortilla strips while the eggs are still slightly wet so they get folded in but stay crispy in spots.

Serve immediately topped with cilantro and a spoonful of salsa. Great with warm flour tortillas on the side.
