Add dates to a food processor and pulse until they form a sticky paste. If they're dry, soak in warm water for 5 minutes first.

Add shredded coconut, almond butter, oats, cocoa powder, vanilla, and salt. Pulse until everything is combined and the mixture holds together when pressed.

Roll into 12 balls using slightly wet hands. Roll each ball in the extra shredded coconut.

Tip: If the mixture is too sticky, chill for 10 minutes first. If too dry, add a teaspoon of water.
