Mix the chia seeds, coconut milk, honey, and vanilla in a jar or bowl. Stir well, making sure there are no clumps.
Cover and refrigerate for at least 4 hours or overnight. Stir once after 30 minutes to prevent clumping.
Tip: The pudding thickens significantly overnight. If it's too thick in the morning, stir in a splash more coconut milk.
Divide into two bowls or jars. Top with diced mango, berries, toasted coconut flakes, and sliced almonds.
