For the dressing

Season chicken with salt and pepper. Grill or pan-sear over medium-high heat for 6-7 minutes per side until cooked through. Rest 5 minutes, then dice.
Whisk together red wine vinegar, Dijon mustard, olive oil, salt, and pepper for the dressing.
Arrange chopped romaine on a large platter or individual plates. Arrange chicken, eggs, bacon, avocado, tomatoes, and blue cheese in neat rows on top.
Tip: The beauty of a Cobb is the composed rows. Take the extra minute to arrange it. Eat with your eyes first.
Drizzle with dressing just before serving, or serve on the side.
