Instructions
Preheat oven to 350F. Combine lamb, grated onion, garlic, oregano, cumin, coriander, salt, and pepper. Mix well and press into a compact loaf shape on a sheet pan lined with foil.
Bake for 25 minutes until the internal temperature is 160F. Let rest 10 minutes, then slice as thin as possible.
Tip: Packing the meat tightly and slicing thin mimics the texture of rotisserie gyro meat.
Make the tzatziki: combine Greek yogurt, grated cucumber, lemon juice, garlic, and a pinch of salt. Refrigerate until ready to serve.
Warm pita in a dry skillet or oven. Layer with sliced lamb, tomatoes, red onion, and a generous drizzle of tzatziki.
