Preheat oven to 400F. Line a baking sheet with parchment paper. Place salmon fillets skin-side down.
Spread a thin layer of Dijon mustard on top of each fillet.
Mix parsley, dill, garlic, lemon zest, panko, olive oil, salt, and pepper. Press the herb mixture onto the mustard-coated tops of each fillet.
Tip: The mustard acts as glue for the herb crust and adds a subtle tang. Don't skip it.
Bake for 12-15 minutes until the salmon flakes easily with a fork and the herb crust is golden.
Serve with lemon wedges. Pairs well with roasted asparagus or a simple green salad.
