Mix cold rice with 1 beaten egg, Parmesan, and salt. Take a golf-ball-sized portion, flatten in your palm, press a cube of mozzarella in the center, and shape into a ball around it. Repeat.
Tip: The rice must be cold so it's sticky enough to hold together. Warm rice will fall apart.
Set up a breading station: flour, remaining beaten egg, breadcrumbs. Roll each ball in flour, dip in egg, then coat in breadcrumbs.
Refrigerate the breaded balls for at least 30 minutes to firm up. This helps them hold their shape during frying.
Heat oil to 350F. Fry in batches for 3-4 minutes until deep golden brown. Drain on paper towels. Serve with warm marinara.
