Preheat oven to 400F. Mix the spinach, feta, cream cheese, garlic, and sun-dried tomatoes in a bowl.
Cut a deep horizontal pocket in each chicken breast (don't cut all the way through). Stuff each with the spinach mixture and secure with toothpicks.
Tip: Use a sharp knife and take your time. A deep pocket means more filling stays inside during cooking.
Season the outside of each breast with olive oil, paprika, salt, and pepper.
Heat an oven-safe skillet over medium-high heat. Sear chicken 3 minutes per side until golden. Transfer skillet to oven.
Bake for 15-18 minutes until internal temp reaches 165F. Rest 5 minutes before removing toothpicks and slicing.
