Combine lamb, beef, grated onion, garlic, parsley, cumin, paprika, red pepper flakes, and salt. Mix with your hands until well combined. Shape into small oval patties, about 2 inches long.

Tip: Grate the onion rather than dicing it. The onion juice mixes into the meat and keeps the kofte incredibly moist.

Heat olive oil in a skillet over medium-high heat. Cook the kofte for 3-4 minutes per side until well-browned and cooked through.

Warm the pita bread. Serve the kofte with yogurt, a sprinkle of sumac, and warm pita. A simple tomato-cucumber salad on the side is traditional.
