Mash the avocados in a large bowl with lime juice and salt until mostly smooth with some chunks remaining.
Add the chicken, red onion, cilantro, celery, and pepper. Fold gently to combine without turning the avocado into paste.
Tip: Use rotisserie chicken for a zero-cook version. Pull the meat while it's still warm for easier shredding.
Taste and adjust salt and lime. Serve on bread as a sandwich, in lettuce cups for low-carb, or over greens as a salad.
