Preheat oven to 375F. Remove stems from mushrooms, finely chop the stems and set aside. Brush caps with olive oil and place hollow-side up on a baking sheet.
Mix cream cheese, Parmesan, garlic, chopped stems, parsley, salt, and pepper in a bowl until well combined.
Fill each mushroom cap with a generous mound of the cheese mixture. Top with breadcrumbs.
Bake for 18-20 minutes until the mushrooms are tender and the tops are golden brown. Let cool 5 minutes before serving.
Tip: Don't skip the cooling time. The filling is molten hot straight from the oven.
