Marinate chicken pieces in buttermilk for at least 15 minutes (or up to overnight in the fridge).

Tip: Buttermilk tenderizes the chicken and helps the coating stick. Even 15 minutes makes a difference.

Mix flour, cornstarch, paprika, garlic powder, onion powder, cayenne, and salt in a bowl. Remove chicken from buttermilk and toss in the seasoned flour, pressing to coat.

Heat oil to 375F. Fry chicken in batches for 3-4 minutes until golden brown and cooked through. Don't crowd the pot.

Drain on paper towels and season immediately with a pinch of salt. Serve with honey mustard.
