If chicken breasts are thick, butterfly or pound them to an even 3/4-inch thickness. This ensures even cooking.
Tip: Uneven thickness is the number one reason people overcook chicken breast. Even it out and you'll never have dry chicken again.
Whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Coat the chicken and marinate for at least 15 minutes (or up to 4 hours refrigerated).
Preheat grill or grill pan to medium-high heat. Oil the grates lightly.
Grill the chicken for 5-6 minutes per side until grill marks form and internal temperature reaches 165F.
