Preheat oven to 350F. Grease a 9x5 loaf pan. Mash the bananas in a large bowl until mostly smooth with a few small chunks remaining.

Tip: The blacker the bananas, the better the bread. They should be almost entirely brown/black for the sweetest, most intense flavor.

Stir in melted butter, brown sugar, egg, and vanilla until combined.

Add flour, baking soda, cinnamon, and salt. Stir until just combined. Fold in walnuts if using.

Pour into the prepared pan. Bake for 50-55 minutes until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then turn out onto a wire rack.
