Preheat oven to 400F. Cut each pita into 8 wedges. Toss with olive oil, za'atar, garlic powder, and salt.
Spread in a single layer on baking sheets. Bake for 8-10 minutes until golden and crispy, flipping halfway through.

Make the tzatziki: combine Greek yogurt, grated cucumber, dill, garlic, and lemon juice. Season with salt to taste.
