Preheat oven to 375F. Cut the tops off the bell peppers and remove seeds and membranes. Place cut-side up in a baking dish.

Heat olive oil in a skillet over medium heat. Saute the onion for 3 minutes, add garlic, cook 30 seconds. Add ground turkey, cumin, chili powder, salt, and pepper. Cook until browned, about 5-6 minutes.

Remove from heat and stir in the cooked rice, diced tomatoes, and half the cheese.

Stuff each pepper generously with the filling, mounding it on top. Top with remaining cheese.

Add 1/4 cup water to the bottom of the baking dish. Cover with foil and bake for 25 minutes. Remove foil and bake 10 more minutes until the cheese is bubbly and the peppers are tender.

Tip: The water in the bottom creates steam that helps cook the peppers evenly from the outside.
