For the cocktail sauce

Bring a large pot of salted water to a boil with the lemon halves, bay leaf, and peppercorns. Add shrimp and cook for 2-3 minutes until pink and just curled.

Tip: Remove the shrimp the instant they turn pink. Overcooked shrimp are rubbery. They'll continue cooking slightly in residual heat.

Transfer shrimp immediately to a large bowl of ice water to stop cooking. Chill for 5 minutes, then drain and pat dry.

Mix all cocktail sauce ingredients together. Taste and adjust horseradish and hot sauce to your preference.

Arrange shrimp on a platter with the cocktail sauce in the center and lemon wedges on the side. Refrigerate until ready to serve.
