Cook the noodles according to package directions. Reserve 1/2 cup cooking water, then drain.

Mix all the sauce ingredients (chili oil, soy sauce, sesame paste, vinegar, sugar, Sichuan peppercorn) in a bowl. Thin with a splash of noodle cooking water until pourable.

Heat vegetable oil in a skillet over high heat. Brown the ground pork, breaking it into small crumbles, for 4-5 minutes until crispy.

Add garlic and preserved mustard greens to the pork. Stir-fry for 1 minute.

Divide the sauce between two bowls. Add the drained noodles and top with the pork mixture, crushed peanuts, and green onions. Toss everything together before eating.

Tip: The magic is in the mix. Toss the noodles thoroughly so every strand is coated in the sauce.
