Warm, flaky buttermilk biscuits smothered in a creamy, peppery sausage gravy. A Southern breakfast classic that works just as well for dinner.

Instructions
Preheat oven to 450F. Whisk together flour, baking powder, and salt. Cut in cold butter using a pastry cutter or your fingers until the mixture looks like coarse crumbs.
Pour in buttermilk and stir until a shaggy dough forms. Turn out onto a floured surface, pat to 1-inch thick, and cut into rounds. Place on a baking sheet and bake 12-14 minutes until golden.
Tip: Don't twist the cutter when cutting biscuits. Press straight down so they rise evenly.
While biscuits bake, brown the sausage in a large skillet over medium heat, breaking it into crumbles. Do not drain the fat.
Sprinkle flour over the sausage and stir for 1 minute. Slowly pour in the milk while stirring constantly.
Cook, stirring often, for 4-5 minutes until the gravy thickens. Season with salt and plenty of black pepper.
Split the biscuits and ladle the sausage gravy generously over top.
