Instructions
Quick pickle: toss daikon and carrots with rice vinegar, sugar, and a pinch of salt. Let sit at least 20 minutes.
Marinate pork in soy sauce, fish sauce, brown sugar, garlic, and lemongrass for at least 15 minutes.
Cook pork in a hot skillet or grill over high heat for 2-3 minutes per side until caramelized and cooked through.
Tip: High heat is important for the caramelized edges that make banh mi pork special.
Toast the baguettes until crispy outside but still soft inside. Spread with mayo (and pate if using). Layer pork, pickled vegetables, cucumber, cilantro, and jalapeno slices.
