Preheat oven to 425F. Toss sliced apples with sugar, flour, cinnamon, nutmeg, and lemon juice.
Fit one pie crust into a 9-inch pie plate. Add the apple filling and dot the top with butter.
Tip: Mix firm and soft apple varieties. Granny Smith hold their shape, while Honeycrisp break down slightly for a jammy filling.
Place the second crust on top. Trim, fold, and crimp the edges. Cut 4-5 slits in the top for steam to escape. Brush with beaten egg and sprinkle with coarse sugar.
Bake at 425F for 15 minutes, then reduce to 375F and bake 35-40 more minutes until the crust is golden and juices are bubbling. Cool for at least 1 hour before slicing.
