Preheat oven to 350F. Line an 8x8 pan with parchment. Mix butter, powdered sugar, flour, and salt until crumbly. Press into the pan and bake 18-20 minutes until the edges are just golden.
Whisk together eggs, sugar, flour, lemon juice, and lemon zest until smooth.
Tip: Use fresh lemon juice, never bottled. The difference in flavor is enormous.
Pour the lemon filling over the hot crust (pouring onto a hot crust helps it set evenly). Bake for 18-22 minutes until the filling is set and no longer jiggles.
Cool completely, then refrigerate for at least 1 hour. Dust generously with powdered sugar before cutting into squares.
