Preheat broiler. Mix tuna, mayonnaise, celery, Dijon mustard, lemon juice, salt, and pepper in a bowl.
Butter one side of each bread slice. Toast buttered-side down in a skillet over medium heat for 2 minutes until golden.
Place toasted bread on a sheet pan, toasted-side down. Divide tuna mixture onto each slice and top with cheddar cheese.
Tip: Use oil-packed tuna for richer flavor, or solid white albacore in water for a lighter version.
Broil for 2-3 minutes until the cheese is melted and bubbling. Serve open-faced or sandwiched together.
