Mix soy sauce, oyster sauce, cornstarch, and water in a small bowl. Set aside.

Heat 1 tbsp oil in a large skillet or wok over high heat. Add broccoli and stir-fry 3 minutes until bright green and crisp-tender. Remove to a plate.

Add remaining oil. Cook shrimp in a single layer for 1-2 minutes per side until pink. Add garlic, ginger, and red pepper flakes. Cook 30 seconds.

Tip: Don't move the shrimp for the first minute. Let them get a good sear before flipping.

Return broccoli to the pan. Pour in the sauce and toss everything for 1 minute until the sauce is glossy and coats evenly. Finish with sesame oil.
