Separate onion slices into individual rings. Soak in ice water for 15 minutes to crisp them up. Pat completely dry.

Whisk flour, cornstarch, baking powder, and salt. Add cold beer and egg, stir until just combined. A few lumps are fine.

Tip: Use cold beer and don't overmix. The carbonation and cold temperature create an incredibly light, airy batter.

Heat oil to 375F. Dip rings in batter, let excess drip off, and fry in batches for 2-3 minutes per side until deep golden brown.

Drain on a wire rack (not paper towels, which make them soggy). Season with salt immediately and serve hot.
