For the bechamel
Instructions
Make the bechamel: melt butter in a small saucepan over medium heat. Whisk in flour and cook for 1 minute. Slowly whisk in milk, then cook, stirring constantly, until thickened, about 3-4 minutes. Season with nutmeg, salt, and pepper.
Spread Dijon mustard on two slices of bread. Layer ham and half the Gruyere on top. Close the sandwiches with the remaining bread slices.
Place the sandwiches on a baking sheet. Spoon bechamel over the tops and sprinkle with the remaining Gruyere.
Broil on high for 3-4 minutes until the cheese is golden and bubbling. Watch closely to prevent burning. Let cool for 2 minutes before serving.
Tip: For a Croque Madame, top with a fried egg after broiling.
