For the garlic butter

Mix warm water, yeast, and sugar. Let sit 5 minutes until foamy. Combine flour, salt, and baking powder in a bowl. Add the yeast mixture and yogurt. Knead for 5 minutes until smooth and elastic. Cover and let rise 1 hour.

Divide the dough into 6 pieces. Roll each into an oval about 1/4-inch thick.

Heat a cast iron skillet over high heat until smoking. Cook each naan for 1-2 minutes per side until puffed and charred in spots.

Tip: Get the skillet screaming hot. The high heat is what creates the characteristic bubbles and char. Don't be afraid of a little smoke.

Mix the melted butter with minced garlic. Brush each hot naan generously with garlic butter and sprinkle with cilantro.
